Memorial Day Menu

If you’re an east-coaster then you know the importance of Memorial Day weekend. It is the official kick-off to summer! The people of NYC vacate the city and head east to barbeque and celebrate the beginning of half-day-Fridays. Here in LA, it’s always warm, so there isn’t as much celebrating going on except for the ex-East coasters gathering together out of tradition, and of course a day off.

So, what’s on the menu for a healthy fiesta for those of us who don’t have the time to prepare a gourmet feast and don’t want to blow our pre-summer bikini bod?

Here are some easy ideas for a breezy BBQ:

Arugula, beets, and goat cheese salad: Trader Joe’s sells beets already boiled and organic arugula that is pre-washed. Done!

Corn on the cob: Boil a few ears or throw them on the grill. Serve with sea salt. They are in season, therefore super sweet and don’t need butter. Done!

Feisty Fish Tacos: See recipe below. If you don’t feel like that much work, throw some wild salmon steaks or tuna steaks on the grill and sprinkle fresh lemon, salt and pepper. Done!

Quinoa: Boil a cup or two of quinoa and you can season with turmeric, garlic, salt and pepper for a flavorful and high protein whole grain. Done!

Dessert: Cut up a big watermelon and call it a day. Throw some tequila in the empty watermelon shell and enjoy!

It’s that easy. You have your green salad, corn, healthy protein, and whole grain which fulfill the components of any healthy meal: lean and clean protein, healthy fat, and unrefined complex carbohydrates. Delicious and Done!
