Yes, it’s true. Two of my favorite things in one cookie, pumpkin and chocolate. This time of year makes me so happy because I have an excuse to put pumpkin in almost everything! These cookies are no exception. If you use gluten free oats then these cookies can be totally wheat and gluten free as well as vegan, low fat, and delicious. I took this recipe from the Institute for Integrative‘s Healthy Snack guide that you can download here.
2 cups of rolled oats
1/2 cup organic applesauce
1/4 cup chopped almonds
1 tbsp cinnamon
1 tsp vanilla extract
1 cup pumpkin puree
1/3 cup dried cranberries
1 tbsp maple syrup
1/3 cup dark chocolate morsels
1. Preheat oven to 350 degrees.
2. Mix all ingredients in a bowl.
3. Spray the cookie sheet with non-stick cooking spray.
4. Scoop 1.5 inch cookies onto the sheet
5. Bake for 15-20 minutes.
