Gluten Free Chunky Monkey Muffins

photo-5On Day 9 of my #30DaysofVitamix Challenge I was just not in the mood for another smoothie for breakfast. It was chilly here in LA, and wanted something warm and freshly baked. I also felt like surprising my boyfriend with a little treat since I was up so early training a client. I found an excellent recipe for banana muffins and did what I do best; modify to make it healthier. Here is the end result. Enjoy them!

2 bananas
1 cup plus 3 tbsp gluten-free all-purpose flour
1 tsp baking powder
pinch of salt
1/4 cup brown sugar (optional)
1/4 cup maple syrup
1/3 cup light coconut milk (you can also use almond, soy or rice milk)
2 beaten eggs
2/3 cup dairy free spread, melted (I use Earth Balance)
3/4 cup dark chocolate chips (optional)
1/2 cup chopped pecans

Preheat the oven to 400 degrees. Place 12 baking cups in a muffin tin. Place all liquid ingredients including the bananas into your Vitamix (or other) blender and blend. Add the rest of the ingredients (besides pecans) and blend until smooth. Pour mixture into the cups and sprinkle chopped pecans on each muffin. Bake for 20 minutes, until golden and risen.
