Elvis. Not exactly the pillar of health, but I hear he liked banana and peanut butter together. I LOVE banana and natural peanut butter on a gluten free waffle, a piece of sprouted grain toast, or just by itself as a midday snack. And now, in a smoothie! Here’s a creation from my #30DaysofVitamix Challenge:
1/2 large banana
1/2 coconut milk (almond or rice milk is good too)
1 tbsp natural peanut butter (no Skippy or Jif here)
1 tbsp ground flax seed
1 tbsp chia seeds
3 ice cubes
The serving size is on the small size but it is filling and contains about 300 calories. Great for a small meal after a workout. For more of a meal, you can add a scoop or two of a clean protein powder like brown rice, hemp or whey.
Blend in your Vitamix or other blender and drink this delicious smoothie that tastes like an ice cream shake!
