Lucky for me, the Superbowl fell on my 30th day of my #30DaysofVitamix Challenge, so I needed to use my blender instead of buying a store bought app to bring to a friend’s house.
Superbowl parties tend to be filled calorically atrocious foods! But, there are healthier substitutions. For example, I made this spinach artichoke dip with 2% fat Greek yogurt vs. fattening versions containing sour cream and cream cheese. I also used part-skim mozzarella cheese vs. full fat cheese. The taste is still delicious and you feel like you are getting a real treat! Serve with raw carrots, celery, red/orange/yellow peppers or even jicama.
4 cloves garlic
1/2 onion, chopped
1 tbsp EVOO
1 red pepper, chopped
1 cup of chopped frozen spinach
1 can of artichoke hearts
16 oz. Greek yogurt (0% or 2%)
1 tbsp mayonnaise (optional)
shredded part skim mozzarella
In a medium pan, saute the garlic and onions in olive oil over medium heat. Add the red pepper and let cook for about 3 minutes then add spinach, salt and pepper and cook for another 3 minutes or so. At the end you can add the artichoke hearts as they don’t really need to be cooked. Add the mixture to your Vitamix or food processor until it is blended but not liquified. So, use the the variable setting on low. Next add mayo, cheese and yogurt. All done! You can also quickly bake it with an additional layer of mozzarella, but I say it’s good as it is! Enjoy the game!
