This smoothie is inspired by it and the fact that I could eat peanut butter jelly every day of my life in various forms; mixed into a Greek yogurt, on a rice cake, or on toast. And now, I drink it in a smoothie without actually using jelly, or bread for that matter. Here you go:
1 cup of fresh strawberries
3/4 cup of coconut milk (almond milk, soy milk or rice milk can also be used)
2 tbsp of ground flax seed
2 tbsp of natural peanut butter (almond butter is good too)
3 ice cubes
1 scoop of vanilla whey protein powder (hemp, brown rice or pea protein are great vegan sources)
Blend in your Vitamix or other blender. Garnish with shredded coconut, chia seeds and/or chopped nuts. This can serve two people or one large smoothie as a meal.
