It’s stone fruit season at the farmer’s markets! I love peaches, nectarines and apricots and am now adding them to my summer smoothie ritual. Here’s a fun recipe to get anyone to eat more greens, including your kids, husband, boyfriend, or parents.
This green smoothie is also super hydrating because of the coconut water, so I use it as a post-workout meal after a sweaty run or gym sesh. One serving has about 15-22 grams of protein, depending on which powder you choose so this will aid in muscle recovery.
As a vegetarian (really a pescetarian), this is how I get enough protein in my day.
Vega Protein Smoothie powder has 15g per serving and the Vega Sport – Performance Protein has 22g of plant based protein. So depending on how hard my workout was, I adjust accordingly. Vega brand is soy-free, dairy-free and all plant based. It’s my absolute go to!

2 scoops vanilla plant based protein powder (I use Vega brand protein smoothie or Vega Sports)
1 cup coconut milk
1/2 cup coconut water
1/2 cup water (or less depending on how thick you like it)
2 long leaves of kale (deveined)
1 peach (or nectarine)
5 ice cubes
Serves 2
Blend and enjoy!
