Persimmon Kale Smoothie Recipe

I’m a bit obsessed with persimmons and try to buy them every week at the Brentwood farmer’s market. The non-astringent Fuyu persimmons are usually the sweetest and I do peel them before eating. If the week is coming to a close and I can’t finish my persimmons before they are about to go bad, I use them in my morning green smoothies. Here’s a healthy, vegan, kale smoothie that is delicious and contains 20 grams of plant-based protein from Vega One nutritional powder. Therefore, it’s a healthy breakfast or a post-intense- workout big snack! Enjoy 🙂

 

Persimmon Kale Smoothie

Serves: 1

Ingredients:
1 peeled persimmon
1 cup kale
1 scoop French Vanilla Vega One protein powder
½ cup almond milk
½ cup coconut water
½ teaspoon cinnamon
4-5 ice cubes

Directions:
1. Place all ingredients into a blender and blend until smooth.
