Vegan Chocolate Mousse Recipe

Valentine’s evening can be the worst night to go out, at least from my experience living in NYC or LA. The same restaurants you go to on a regular night will charge you double and give you a limited menu to choose from. How is that any good? So, maybe it’s a night you want to stay in and cook a nice dinner.

If so,  you can whip up this dessert in less than 10 minutes for your last dose of chocolatey goodness for the day with healthy fats from avocado and nut butter to help reduce the glycemic load of the dessert.

Vegan chocolate “mousse”

Ingredients:
Serves: 2

1 banana
2 dates
½ avocado
2 tbsp of unsweetened cacao powder
2 tbsp almond or peanut butter
1/4 cup light canned coconut milk
3 to 4 ice cubes
1-2 tbsp pomegranate seeds, sliced for garnish

 

Directions:

  1. Add all ingredients (except pomegranate seeds) into a blender and blend until smooth.
  2. Serve in a small fancy glass and top with pomegranate seeds.
