Strawberry Coconut Smoothie Recipe

I post more smoothie recipes than probably any other kind of foods these days because most mornings I start my day with a smoothie. So, I’m always combining different fresh ingredients that I have on hand to come up with delicious and nutritious ways to break the fast. This day I had a coconut shell in my fridge after someone drank the water from it but didn’t scrape out the meat. Perfect! I scraped it all out and put it right in my Vitamix blender with the rest of these ingredients for a super tasty treat.

Coconut meat contains a high amount of saturated fat. But don’t let that scare you. The fat in coconut meat comes in the form of medium chain fatty acids which are broken down quicker than the long chain fatty acids and do not result in high cholesterol. Eat this kind of fat for fuel and your body will start to burn more fat!

Ingredients:
1 cup strawberries (about 6 medium strawberries)
Meat of 1 young coconut
1/2 cup hemp milk (can use almond milk instead)
1 tablespoon hemp seeds
1/2 scoop plant based protein powder (Vanilla flavored)
Handful of ice

Directions: Blend and enjoy!

Variations:

You can replace the protein powder with 1/2 cup of Greek yogurt.
If you don’t have a fresh young coconut, you can use coconut oil or coconut butter as a substitute. The taste will vary and in my opinion not be as good. But you will get the same health benefits. In that case, use 1-2 tablespoons of the other forms of coconut.
