Flourless Peanut Butter Cookies

Do you love peanut butter?

Do you love salty sweet treats?

Do you hate complicated recipes?

If you answered yes to the above, then run don’t walk to the kitchen and whip up these flourless peanut butter cookies in less than 20 minutes total including baking time!

I made these last night and was so pleased with the result. I used half of the sugar that most recipes called for and substituted coconut sugar for regular white table sugar. Coconut sugar has a slightly lower glycemic index than table sugar, therefore, not spiking your blood sugar and insulin levels as quickly. Also, because it comes from coconut it does fall under the Paleo diet, if that is something you care about.

There is absolutely no flour in the recipe, making them naturally gluten free as well.

Here is your recipe for Flourless Peanut Butter Cookies:

1 cup peanut butter
1/2 cup coconut sugar (if you want them sweeter than add more sugar)
1 egg
1 teaspoon vanilla extract

Directions:

Preheat oven to 350 degrees.

Mix all ingredients together in a mixing bowl.

Plop little balls of mixture onto a baking sheet and flatten with a fork.

Sprinkle with coarse sea salt.

Bake for about 12 minutes or until the edges are slightly browned.

Voila! You have a healthy, kid-friendly, diet friendly dessert!
