Coconut Chia Seed Pudding

To all of my people out there that tell me that they don’t have time to make breakfast in the morning… this one’s for you.

Coconut chia seed pudding is a easy way to avoid the trap of a high carb, on-the-go breakfast like bagels, toasts, muffins, cereal, etc. AKA, the worst things you can eat for breakfast.

High carb breakfasts set you up to eat more throughout the day because they really don’t satiate you. Also, they send your blood sugar and insulin on a wild ride resulting in a blood sugar crash later on in the morning.

With that said, protein is where it’s at for breakfast. But, the typical breakfast protein choices like sausage or bacon are a heavy, greasy way to start your day.

On the other hand, chia seeds are rich in protein and give you a super dose of fiber (11 grams per one-ounce serving), which makes them ideal for sustainable energy and helping you poop!

I prepare my coconut chia seed pudding at night and it’s all set to go in the morning. Try it and let me know how you like it!

Ingredients:

1 1/4 cup coconut milk
1/4 cup chia seeds
1 tsp vanilla extract

Toppings:
blueberries, raspberries, strawberries
shredded coconut
almonds, pumpkin seeds, or your fave nut/seed combo
raw honey
sprinkle of hemp seeds
fresh mint

Directions:

  1. Put coconut milk, chia seeds and vanilla extract in an air-tight jar and seal it shut.
  2. Shake it a couple of times within the hour if possible. Go to bed.
  3. Wake up and take a serving in a separate bowl or mug and top with your favorite toppings.

Note: you can make individual servings if you want to use small jars that you can take to work with you. This recipe batch lasts me about 3-4 servings.
